This weeks CSA is awesome. However, I now have 2 gazillion soybeans being totally beanacious in my fridge. I have 2lbs of soybeans. Seriously? What do I do with all that?
This week we got peaches, soy beans, tomatoes, bell peppers, eggplant, carrots, lettuce, cilantro, onions and bok choy. Do you smell salsa?
After hauling this crazy boat of vegetables home, I was starving, so I promptly made this:
The sphagetti and soybeans can cook together. The sauce is:
1/3 c vinegar (I used plum, white and white wine)
1/3 c water
chives
3 T soy sauce
2 t agave
2 t sesame oil
red pepper flakes
It was pretty good. The veggies were perfect.
Make edamame hummus!
